The Caramel Toffee Cookie was an idea from my oldest daughter, Anne. She loved making Scotch-a-roos for all of her friends and family and would often present them as a house-warming present, thank you gift or spur-of-the-moment pick-me-up, We ran with that taste pallet and combined toffee, butterscotch and dark chocolate to create the perfect recipe.
