I developed the Lemon Cream Cookie for a colleague with a chocolate allergy. As I was perfecting my State Fair Chocolate Chip Cookie, I would bring samples into the office to have my co-workers taste test for me. Because of his allergy, my colleague was unable to participate in the tasting. He LOVED lemon, though, so when I stumbled onto lemon flavored baking chips, it seemed natural to create a cookie he could enjoy.
