Growing up, my father's favorite cookie was plain, old oatmeal rasin. When everyone else would go for the chocolate chip or peanut butter cookies, he would reach for the oatmeal raisin. Dad is also a huge fan of mixed nuts, so when I started thinking about offering a less sweet (and healthier) cookie, I naturally turned to my dad's old favorite and dressed it up a bit. The Oatmeal Cranberry Pecan Cookie features whole rolled oats, dried cranberries, honey, and pecans.
