This cookie combines three of my favorite flavors: chocolate, coffee and beer. The idea for this cookie was the result of a marketing meeting focused on developing a mint-flavored cookie for St. Patrick's Day, Our marketing consulatant completely changed our direction when she said, "No one buys mint for St. Patrick's Day anymore. If you want to create something that people will buy, put booze in it." With the change in direction, we had all kinds of people wanting to be apart of the taste-testing research team! The result was a Triple Chocolate Guinness Espresso Cookie that is (almost) as good as a glass of Guinness.
