The White Chocolate Almond Cookie is an homage to the years we lived in Pella, Iowa, and were able to enjoy the delicious taste of the Dutch pastries. This recipe emerged out of my wife's suggestion that we develop our own cookie version of the classic Dutch letter, Pella's signature treat. When we had finished creating the recipe, my youngest daughter, Danielle, declared "This is the best cookie I've ever tasted!" You'll have to try it and decide for yourself. The white Chocolate Almond Cookie delivers the classic flavor of the almond paste filling associated with a traditional Dutch Letter and is topped with shaved almonds.
